At the moment we're only able to use custom styles on a paragraph. Is it possible to create a feature which allows me to implement styles on selected text in the editor? Or is there a way I can do this myself?

Well, Matt, this isn't something that can be done in a few seconds. You will need to alter the TinyMCE configuration to include the extra plugin (and I am not sure it will work 100% like you requested).
But I will discuss this with the other developers/designer if it would be a useful feature to include in a future release.
Can you describe a typical situation where you would need this?

Well, I like it for Branding certain words in a text... Don't mind this example, I'm rebuilding it in Fork :-)

Thing is, I perfectly know how to edit the span's in the HTML - but I'm not the one who wants to implement the colours - I prefer the text to be in the same layout...

Matt, we won't include the plugin jn the default install of Fork.
